Couple ?'s: starter "life" and bottle aging

First, I planned on brewing an APA last week, and had a .75L starter all made and fermented. Real life came into play and I had to put off the brewing until tonight. The starter (WLP060) was kept in the fridge with an airlock for a week, until last night when I moved it into my fermentation fridge (kept at 66F) - will it be fine to pitch tonight after brewing?

Secondly, I have a Tripel and an RIS in secondary right now knowing that they will need at least a month (planning more for the RIS) to develop. Is bottle-aging the same as sitting in secondary? I'd like to get these bottled once their 2wks in secondary are up unless leaving them in longer before bottling would be more beneficial.
 
i, personally, would make a new starter at this point if i were you.

as for bottle conditioning to secondarying, no. putting your beer in a secondary is a mass quantity means of clearing up your beer and letting the yeasties clean up a bit. when you bottle, it takes your product at the point of where it is and throws it into its own individual container. it will still clean up a bit and clear out, but whats in the bottle is not gonna change too much (aside from carbing up).

However, I see you are in Pittsburgh. Just in case you are a steelers fan, as i am a browns fan, i recommend that you bottle while your beer is still actively fermenting. This way, your bottles will naturally carb and you wont have to waste any money on priming sugar. make sure you keep all of you bottles randomely placed throughout the house.

I just pitched a starter under the same conditions... made the starter with some washed yeast.....planned to brew , and as you said life got in the way. brewed a week or so later and decanted and pitched the starter... activity with a couple of hours.
 
The starter should be fine. Yeasties are pretty tough and a week of sitting around waiting for fresh food shouldn't make too big of a difference.

Also, buy a second fermenter. Not a huge expense and you'll want another one sooner or later anyway.
 
Oh I have 2-5gal secondary fermenters (one currently holding a 3wk old Tripel). Just wondered if it actually mattered if I moved the beer there or had them develop in bottles. I guess what pwnda said makes sense.
