I have some corney's that I had planned on using for beer, but never got a CO2 tank.
Since I hate to have brewing equipment around that isn't being used, could I put them into service as fermenters/aging/oaking vessels for my wine?

Absolutely. I would get a little CO2 cartridge to blow some in to avoid too much headspace.

I was toying with the idea of actually asking the brew shop if they'd force carb a keg of some wine to see how it would turn out as a sparkling wine.
