Good day,

I used my home made immersion chiller twice now and noticed that my brew comes to a complete stand still when I first submerge it.

My question is, can this cause any harm to the brew if the temperature drops to below boiling when submerging it and slowly climbs back up again?

I tried running hot water through it "could barely touch it" but the same thing happened.
 
Just crank the heat a little when you put the chiller in, get it back to a nice rolling boil.

Introducing that much mass into a 5 gallon batch will bring the temp down sure, you just have to counteract it with more heat.
