For chocolate and a good stout recipe, start with the founders kbs/breakfast clones released by the brewers. Basically its baking chocolate and also, I use powdered chocolate with 10 minutes left or so in boil. There is a thread here with more. For coffee put it in at kegging and rack beer onto it. I love chocolate flavor and next time I am going to add a lot more powder. The recipe calls for cocoa nibs. Cacao is different and unless you know you love it, it might not be the right flavor. Cocoa and probably even quality dutch processed is what you need.
 
Also I have heard @yoopers stout is really good. Iirc correctly she really likes stouts and knows a great deal about them. That recipe would be a great place to start.
 
Chocolate has to be added in order to make a chocolate stout and not just relying on the chocolate and carafa III to do the trick?

If you want it to be really chocolatey, yes. I've used cacao nibs twice now and per the recommendation from someone here, i toasted them the last time. It gave them more of a finished dark chocolate aroma. That beer is almost done so well see how that goes.

I used cocoa powder in my last choc pb milk stout. I don't think i'l do it again. The chocolate was hardly there and ive read it can give you more of a bitter sensation when using it in the boil.

I did read that in the 2018 goose island proprietors bcbs, they used 3 kinds of chocolate in that beer including baking chocolate. I haven't had one but heard it's very chocolatey

Thanks for this, JJ900! Grew up in Moorhead and friends took me to Junkyard when back visiting this summer. So happy with the beer scene in Fargo-Moorhead. Lot of great experimental stuff going on!
