So I have the collar attached to my Keezer, now wondering the best way to pass CO2 lines, cords, thermocouples through it and still be able to seal it. Do you simply drill it and then chalk around the lines or is there a better way to handle the pass through.

For gas lines many of us use 1/4" MFL-MFL bulkheads like this:

This length is suitable for passing through "two-by" boards (ie: 2x8, 2x10, etc) and also works great for most refrigerator cabinets. I used a bunch of these on my keezer and three brewery fridges. You can see five of them on my keezer below.

For electrical stuff I used panel connectors mounted on a fiberglass panel integrated into the woodwork, just to the right of the middle hinge below...
