A local Taqueria is running a homebrew competition with a unique twist, calling it ReinheitsRevolt. Basically, the beer has to include two of the following ingredients:

Agave Nectar
Oak
Maple
Chipotle Peppers
Cacao Nibs
Cilantro
Cactus
Lime Peel

I'd like to get pretty creative (and staying away from the perhaps more proven "chocolate chipotle stout/porter" type recipes), but am running into a bit of "brewer's block". My current leading idea is to do a sort of Chipotle Agave APA being careful to subtly balance both the agave and chipotle.

Anyone with other creative combination ideas?
 
A belgian blond made with cactus and lime peel and fermented with wyeast 3942? I mean the cactus is just sitting there in the list, mocking you, daring you to use it.
 
When in doubt, saison it! Seriously, saisons are pretty flexible, agave nectar and lime peel could be a great combo in a saison. If you like a darker beer, I might aim for chipotle peppers and Cacao Nibs for a spicy/sweet combo. Alternatively, you could double down on the sweet with a hefe made with maple and cactus. That's a few ideas off the top of my head.
 
Coriander/cilantro (seed rather than leaf) and lime could do well in a wheat beer. There's a couple of beers in the UK that use coriander seed.
 
A dark witbier with cacao and agave? Could even add some canela and piloncilo; they're not on the list but sure would fit.
 
Agave nectar + lime peel + IPA With Citra or wakatu or cascade

Keep the IBUs from 40-60 and the agave nectar should dry it out. Probably a simple answer as I cannot think of anything more clever.
 
I've brewed a couple batches that use Maple and Oak, aiming to be a kind of Crown Maple type drink with out all the bourbon flavor. but that could be a new way to go as well making it bourbon "oak" aged.
