So this may be a dumb question, but when testing for conversion with iodine, do you test wort from your outtake valve--through the grain bed as if you're collecting or vorlaufing--or is it drawn through the top with something like a turkey baster? I understand you need very little I just don't know which method is accurate! Thanks!

I usually take a little from the valve, but that's just me.

Maybe next time you mash, take some from the valve and some from the top and see if you get different results - I'd be interested to know.

I vorlauf a bit and take a sample from the drain. No matter how many times I've tried getting a sample from the top of the MT, it always has some grain particles in it.
