just got back into brewing aftrer 31 years off. found this interesting mixing calculator online http://www.onlineconversion.com/mixing_water.htm
using it to figure out what temp i can immersion chill down 2.5 gallons down to and then just add cold water to get 5 galons at an exact pitching temp. this way i can keep a few gallons of cold water in the fridge and based on that temp and volume, figure out at what temp i can stop my wort chilling. this may come in handy espcially as my tap water temp changes (dramatically) through the year. thought i'd share.
 
Why not start by adding a block of frozen sterilized distilled water, then top up with cold water (if still needed) and finish with the immersion chiller to reach your target?

That's what I do - plonk a 6 liter block of frozen sterilised water into the hot wort after flame out.
 
my tap water is currently at 78 degrees. i can use that water first in wort chiiler to drive down temp to get a cold break. then get the warmish wort into fermentator and add cold water to get ~ 70 degrees. lets say i have 2.5 gallons of 45 degree water in the fridge. that calculator will let me know how low i need to go tempwise with the wort chiller with 2.5 gaolons of wort to get a blended (warm wort and cold water) temp of 70 degrees. this way also avoids the step of having to freeze anything.
