morning, I added 2 lbs of toasted coconut to my brown ale after secondary... It's been 1 day and the coconut nose and taste is outstanding but my beer went into a slow fermentation (air lock going up and down). Should I pull off the coconut and add the coffee to taste and go to keg or put the car boy in the beer keg fridge to stop fermentation and let it sit for another day? Thank you yes it was un-sweeten coconut and I toasted it. I'll check out the article. My worry is what the flavors will throw fermenting coconut.

Afternoon here are the results:
Did a 48 hour cold stable after adding the 2 lbs of toasted unsweetened coconut. To my surprise the coconut fell to the bottom avoiding a dry cap. The nose and flavor of the coconut was so great I pulled it from the cold stable and double racked into the keg. I then completed my coffee blending trials. The winning blend was: 12 scoops fresh ground high end coffee brewed to 6 cups of water(strong coffee flavor less water to add to the beer) added to the remaining 4 gallons of the finished coconut brown ale. Tasted amazing flat can't way for the finished CO2 product in 3-4 days when force carbonation is complete.

Lightly toasted 12-15 mins @ 375 it turned out great

The coconut is over the top in your face... I love it. A touch more coffee next time to balance better
