Received a 30 lb. Co2 canister from a paintball field is there a risk in using it to pressurize a keg?
 
Yes. You should at least put a regulator on it and dial down the pressure a lot. The unregulated pressure directly from the cylinder outlet is probably very high.

There are several projects on the web about using paintball CO2 cylinder for pressurising kegs. Take a look at them for some ideas.
 
Check the date as all tanks have an expiration. After that they need to be re-certified.
 
If that cylinder is used to fill paintball tanks, it likely has a dip tube inside to draw liquid CO2. If so, you cannot use it to pressurize kegs. A regulator will not fit on the outlet either, for that reason.

Maybe you can swap it out at a gas dealer?
