I recently tried to raise the alcohol content of an island mist kit (raspberry peach sangria) from the original 5-6% to about 10% by adding 4lbs of sugar at the start. It has been about 3 months since I bottled this batch and I noticed that all bottles are a bit cloudy. Not to mention I just sampled some and it is pretty tart.
I have made a couple batches of island mist before without trying to raise the abv and all have turned out clear and delicious.
Has anyone ran into similar issues trying to raise abv?
These are my steps:
Dissolved 4lbs of sugar and added to primary fermenter along with kit juice bentonite yeast etc. from the kit instructions. SG at this point was 1.075.
After 7 days I racked into carboy. My SG was .990.
After 10 days I added the f pack and other packets which raised my SG to 1.01.
I then bottled after 14 days.
Any thoughts or recommendations would be greatly appreciated!
