what can i do to improve it. it is a super chef 10 gal stainless steel food grade catering container its insulated and seals up tight all of the seals work great. i found it at a recycleing scrap yard, i ask the owner what he wanted for it and he said what do you want it for i told him and he said give me a gallon when its done and you can have it.
right now i have 4 gallon fermenting all i did was add champaign pasture

yeast i hope its done in 2 weeks

That looks cool! I'm new at this, too - so have no real value to add. The only thing I can add is that there are three stickies at the top of the forum. There is also a Wiki. I started reading these AFTER starting my first batch of cider. I should have read them before.

Anyway - read the "I thought I would share some info" and the "Results from juice, yeast and sugar experiments" stickies - then when getting closer to bottling, read the "Easy stove top pastuerizing" sticky. Tons of good info - and I'm sure the folks that created those will answer your questions.
