Okay it's probably a little weird to start a spiced christmas ale now but I'm living in the south of brazil so for me winter is coming.
I've a list of ingredients and would like people's option on what way to use them. Probably not the prefect ingredients but hey let have fun!;

2.5kg pilsner malt
2 kg maris otter
0.5kg caramünch i
0.5kg carabelge
0.25kg honey
Oats
Saaz hops
Safale 05 Yeast
Cinammin
Fresh Ginger
Nutmeg
Orange
Lime
Maybe brown sugar to carbonate.

This is a 20 litre batch that I'll make. All opinions are welcome and thanks in advance for everybody's help.
 
I've made some of those holiday ales before and they've always turned out interesting!

Always amazes me how adding in just a little bit of spices (like a 1/4 teaspoon of each) late in the boil can carry through to the final product!

The two recipes I've brewed before use the traditional 5 spices used for making pumpkin pies: Allspice, Cinnamon, Cloves, Ginger and nutmeg. One of the recipes also includes Vanilla Extract and the zest from a couple of fresh oranges.

The only thing I would warn against is going too heavy with ground clove spice, if you use any, that stuff has more of an impact on the final flavor than any of the other spices combined!
