Christmas Ale help

Hi all,

I'm doing a Christmas Ale brew, and I'm not sure of the order/quantities I should add some of my ingredients in. I have:

3 oz NorthDown hops
1 oz Kent Golding hops
jar of pumpkin pie spices (cinnamon, clove, nutmeg, ginger)
bakers cocoa

I also have some cinnamon sticks if that needs to be greater in quantity than the other spices.

If someone could post some suggestions soon that would be much appreciated.
 
Might help if we knew the recipe you were brewing. I'm not familiar with any standard "Christmas Ale" recipe.
 
You have to be much more specific if you want people to answer on stuff like this. You'd need to describe more what you're going for and give a base recipe of what you're doing. "Christmas Ale" or "Strong Christmas Ale" doesn't mean anything because the style is so varied. For me, I don't like spiced Christmas Ales, so to me, Deschutes Jubelale is more what I think of.

Sounds like you were brewing already, so hope it came out great. But next time post more info if you want comments.
