I'm not sure where to technically post this. I posted this in the Stout recipe section, but i think it should technically be posted here. Anyway, just trying to get a basic chocolate stout recipe down that I can tweak later. I'm think the following:



15# uk pale 2 row

2# uk chocolate

.75# crystal 90

.75# flaked oats



Mash at 156 for 60 minutes



2 oz EKG hops for 60 minute boil



I want a really big chocolate flavor on this. I've read quite a few different opinions on chocolate additions. I've seen people that recommend bakers chocolate, others that recommend tossing a dark chocolate bar in, and a few others.



What's your recommendation for the best result? Also, does this grain bill look ok?

Is this for a 10 gallon batch? If it is your grain bill looks good for a brown ale. If it is for a 5 gallon batch there is way too much chocolate malt. I would cut that back to 1 # or even .75 # for a 5 gallon batch. If you want more of a stout characteristic I would add .75 # of Black Patent malt and .75 # roasted barley to go along with .75 # chocolate malt and 9 # pale ale malt for a 5 gallon batch.

Whenever I brew a chocolate stout I add 1 # of lactose. It compliments the chocolate nicely. I add .8 ounces of chocolate powder with 10 minutes left in the boil. This gives a big chocolate flavor. This is for a five gallon batch.

5 gallon batch, yes. Trying to hit around 1.090 og.

I would use the 15 # of pale malt and the rest of the grain bill I suggested. This should give you a nice chocolaty imperial stout.

Think the uk 2-row is good? I've made a couple batches of oatmeal stout with Maris otter. Should I drop the crystal??

I'm not sure you would notice the difference between Morris Otter and UK 2 row with the dark roasted malts and the chocolate but usually Morris Otter produces better quality beers. I'm not sure you would notice the crystal either but adding it would be fine.
