lil help pls, im wanting to please my wife with a chocolate hazelnut porter, were i decide to add the cacoa poder (mixed with boiled water) and hazelnut extrack at keggin. i just have no idea on how much to use of each im making a 5 gallon batch. any ideas?

I don't particularly care for extracts, but I have made vodka infusions with nuts. I used 5 ounces of roasted, peeled, crushed hazelnuts in 6 ounces of vodka. Let sit for a week or so, then taste it. It should be pretty nutty. When ready to bottle/keg, I took several 1 oz samples, and added infusion to them. 1 drop, 2, 4, 8. When I found the amount I liked, I calculated how much for the whole batch. I've doe that with several flavors, and it works fairly well.
