As long as it doesn't have preservatives/milk products you should be alright. Most people use raw cocao powder or cocao nibs to get a chocolate taste.
 
IMHO, extracts shouldn't ever come anywhere near a home brewed beverage! If you want chocolate flavor, use cocoa or nibs to get it (as oldmate also suggested)! If you want cherry flavor, add cherries. You'll never go wrong with the real deal, and extracts will always taste artificial. I've made a great chocolate mead with plain old Hershey's cocoa powder...my recipe is derived from this link.
