Okay so I'm starting with an oatmeal stout recipe kit I got from Midwestsupplies. It is a partial grain with a malt extract. The ingredients "for this recipe include: 6 lbs. Dark liquid malt extract, 8 oz. Rolled Oats, 4 oz. Chocolate Malt, 4 oz. Roasted Barley specialty grains, 1 oz. of hops, yeast, priming sugar and a grain bag."
To this I'm adding bitter sweet cocoa power and a fresh cherry puree. I have a few question I'd like some help with...
How much cocoa to add?
When to add it? I was thinking half during the boil and half during the primary.
How much cherry to add?
I'm under the understanding that when I use homemade cherry puree that I should cook it to avoid contamination. Right?
