hello everyone!!!!
Im new or kinda so trying to learn to make or modify the recipes to be my own

can you guys check this out and see what you think. Suggestions?



Im somewhat new to brewing.. have 3 batches % 5 gallons ea. / with steeped grains of beer so far

1st beer: Dry stout changed into coffee milks stout: finished, was pretty good!
2nd : NB choco. milk stout kit brewed as is: bottled on July 13th 2014 tasted one the next day so far soo good! obviously needs to bottle condition for a while

3rd beer: NB caribou slobber brewed July 6th 2014: will leave in primary for 6 weeks then bottle..skipping 2 secondary

NEW Recipe Type: Chocolate Milk Stout Extract w/ steeped grains (NEED CRITIQUE):confused:
Yeast: Wyeast 1450-PC - Denny's Favorite 50
Yeast Starter: Yes
Batch Size (Gallons): 5.5 @ fermenter
Boil size: 2.5 gallons
Original Gravity: 1.055
Final Gravity: 1.014
ABV%: 5.43
IBU: 21.22
SRM (color): 40+
Boiling Time (Minutes): 60

Fermentables:
6.0 lb Liquid Malt extract Dark ( maybe marris otter extract, instead?)
1.5 lb Dry malt Extract- Wheat

Steeping Grains:
0.75 lb Caramel/Crystal Malt - 60L - not sure exactly?
0.75 lb American chocolate - choc. and coffee notes?
0.50 lb marican roasted barley - roastiness?
1.0 lb flaked/ Instant oats (mouth feel) won't turn into alcohol if not mashed )
0.5 lb american carapils -head retention and some mouth feel?
0.25 lb united kingdom - Extra Dark Crystal 160L -deeper color?


Hops: Bittering
60min boil
0.75 oz german magnum pellet AA:13.4 (IBU18.29)

15mins left in Boil: Aroma
0.5 oz Cluster pellet AA: 6.5 (IBU: 2.93)
IBU total: 21.22

Additions:
4.0 oz of cocoa nibs in secondary for 2 weeks

1.0 lb lactose @ bottling

Get rid of that wheat extract.
It seems okay to me otherwise but I've never used lactose to bottle. I have a chocolate milk stout recipe here if you click on the recipes next to my name. It took 2nd place. It's all grain though but yours looks good.

So if I might ask. Why would you dump the 1.5lbs of dry wheat extract? The other reason I'm asking is because in another milk stout recipe they used
4.5 lbs amber dry extract DME
1.5 lbs dry wheat DME

The stout got rave reviews. I think they described the wheat DME as breadlike smell and taste and smoothness .. That's why I added it to my recipe .. But your the pro and me, well I'm learning still :)

Oh and the lactose I understand can be added to boil

I add mine at bottling since its non fermantable I read that doesn't matter when its added.

I prime with corn sugar at bottoling. I'm probably gonna use 3.05 oz for 5 gallons 2.0 co2

"Hello" critiqued and gave suggestion. Just waiting for her response :) to my questions as to why remove the 1.5 lb I'm new so I want to learn the why's and use this ...etc... :)
 
I am hardly a pro but to me, there is no need for wheat DME/LME in a stout recipe. When I do all grain I don't add wheat, so I wouldn't have thought to do it here. If you saw a stout recipe that got amazing reviews with wheat then add the wheat. That is the beauty of the hobby. Add whatever you want and if it got rave reviews then it must be great. In the end, you'll have a stout. I personally do not want a stout that has a bread-like taste. I want the chocolate to shine, not bread.

I finaly saw "hellos" recipe.. for all grain 5 gallons Dang it looks awesome!

ok so here goes a twist to my brewing adventures

I posted same recipe on Northern brewers and most said hey go all grain because i was thinking of gfoing partial mash they said skip that because YOU will end up ALL grain :D

I have palmers book already .. gonna get designing great beers book too soon very soon !

thinking of buying a 60 qt 1/4" thick aluminum out off amazon gets rave
reviews for brewing beer.. i"m not sold sst is superior vs aluminum..what ever works is good for me.... FYI: I will drill and add valve hardware etc.. too both pots the one i have and the one i plan to get see below link

Ok am I missing anything for all grain FYI: Im mechanically pretty good too so im not afraid of DIY



Equipment I currently have, own:
1. 8 gallon aluminum pot Might be 10 ( used for my previous 3 extract /
steeped grains kits
2. 6.6 gallon plastic bucket and 5 gallon fermenter
3. temp controlled fermenter freezer - built controler myself precise
ferment temps
4. 5 gallon igloo cylindrical cooler, had forever but obviously was used
for water before my adventures in beer making

6. Wort cooling: I use 3 -20lb bags of ice and i freeze my make up water prior..so far it brings wort down to 70 degrees in literally minutes but ice @ 4 to 5 dollars a bag still adds cost every time..

so basicly I need the main stuff for all grain brewing.. can you guys steer me in right direction so that I'm not spending extra on stuff i don't really need
