What kind of beer are you making? If you're doing a really big brew then starting the yeasts off warm can lead to hot alcohol, if it is a normal size brew you should be fine.
Its a strong so its going to be pretty bug. Its already come down like 4' in 25 min... I'll hold it off a little while longer. I don't want to get fusel's...
Before I got a pump to run ice water through my IC, I'd get my lagers down to about 70, then put them in the fermentation chamber and pitch the next morning, once they were at the right temp. Sanitation is super important, of course, but I didn't have any problems over the 5-8 lagers I did that way.
Cool everyone thanks for the response. I waited about 2 hours and it came down fine. Pitched my starter at 70'... The bubble is already starting to move in the blow off hose.
