I really want to hold off trying this until next summer. But yes, for a wuss like you, it's way to cold in November in Pinetop :D

Dude, I know I've been acclimated for the past 20 yrs, but don't forget I grew up in the north & have seen -58F on the thermometer not counting wind chill. Having said that, I don't think I have a winter jacket anymore.
 
I'll probably crack open some of this for tomorrow's Oregon/Auburn game and see how it's progressing....
 
Wow. This stuff is amazingly smooth for only 3 months in the bottle. It didn't carb up at all; I knew the yeasties had probably given there all.

This stuff will be amazing in a year....
 
Did you use a medium toast American oak spiral in this...and did you let it sit for 6 weeks? I know that's what you were thinking but wondered if it actually soaked for that long.
 
Well, it looks amazing, and if it tastes anywhere close to what it looks like...whew! Thanks for the share, and congrats on the bronze.
 
Ok thanks! I actually started this one day before yesterday and my OG was 1.110, close enough for me. This is my first melomel, and I too was surprised at how quickly and vigorously the 71b took off...especially after the traditional mead I made with the same yeast to top these off was so sluggish even with the SNA. This baby is going to town!

A day later, and I'm already down to 1.050...this is going to be one fast ferment.
