4.5 Gallon batch:

3gal Cider/Juice
2lbs Fresh Apples (Peeled, cored, and mashed in it's own syrupy goodness)
1lb C10
6oz Chocolate Malt
8oz Honey Malt
6oz Flaked Wheat - Head
Wyeast ACT1010
 
why the fresh apples? and are you steeping those grains in water or juice

I'll do them in water.

I just thought the apples (mashed ala home made applesauce) would add a bit. Done before all the wort is boiled.

What length of boil is recommended, would 15-20 suffice?

What is you opinion on a 15min boil with a 1oz Cascade addtion at flameout?
 
Thats not really a cider at that point. Why the chocolate? I don't see it mixing too well with the cider flavor. If I want a roasted chocolate flavor on my cider I just float 25% of a glass of guiness on top.
 
I've seen a couple recipes with it and thought it would be tasty, plus I had some already with nothing to call for it.

Still somewhat undecided on that yet.

I think I'll go without the hops.
