I went on vacation last year with my fiancee's family up to the finger lakes in New York. The region is famous for their wineries, but one winery was also a brewery. One of their brews, which was incredible, was a champagne wit--they blended their belgian wit with their reisling 80/20. Is there a way to recreate that idea homebrewing? Could you buy reisling and add it in somewhere? Has anybody seen a recipe like this?

Perhaps you could pour some Wit into a glass and then pour some reisling into the same glass.
 
Take three quarts of wit, add a bottle of reisling (make certain that no sulfites were added). Add in about 2 oz. of sugar & bottle in champagne bottles. Give the flavors about two months to blend.
 
would that be uncarbonated wit? corn sugar? is that for more carbonation. sounds kind of good, and i do have 5 gallons of wit that just finished carbonating and its pretty tasty. wouldn't mind an experiment.
