Hello all. I'm thinking of brewing a dunkelweisse and using some chamomile. I have a bunch of the dried flowers. Has anyone used it before? Do I boil it or dry-hop it? I think I want more aromatic character from it than flavor, so I'm guessing more dry-hopping? Looking for any experience with it. Thanks!

Matt

i use it in my witbiers at 1-2 grams in a 20-25L brew, added with 5 minutes left in the boil. i would always want it boiled personally.
i'm not sure if it's useful to think of every addition in hop terms; micro-rant, i am really starting to hate use of the verb "to dryhop" to mean soaking non-hop stuff in beer. dryhop with coffee beans? no.
hey- maybe try this: steep some in cold water for a couple days, then steep some in boiling water, ie make chamomile tea. let the hot one cool, try them both, see which (if either) has the character you like.

The recipes I've seen with chamomile call for using it in the boil. You can use as much as 2oz for 60 minutes, but some say that is too strong. You will get both flavor and aroma from this method. Not sure about dry hopping with it. Maybe let some flowers soak in a small amount of beer for a week and see if you get the aroma you want.

Look at DFH's recipe.

I've used as little as 1oz of chamomile at 30 minutes and the aroma and flavor were mild but detectable.

I brewed a modified version of the DFH Wildflower Wheat above trying to clone the Wolaver's Wildflower Wheat. The 2oz of camomile at 60 minutes add both camomile flavor and aroma to the brew. I found the 2oz of camomile in my 5 gallon batch to be just right....not subtle but not overpowering either. Very present, but not dominating in the brew.

Let me know if you want my recipe, it turned out really good!

Carters brewery uses chamomile in the hopback, says he doesn't like the way they turn out in the boil,,,he uses it in a famouse saison...just tasted it on monday and the taste is just right, and aroma is present as well...
