Today I brewed a partial-mash IPA (nothing fancy, not gluten-free... just a regular old IPA with some extract and grains). My girlfriend has celiac, and she came over just as I was finishing the boil. We opened some windows, as she was worried that the glutenous stuff might end up in the air.

I'm assuming that the only thing that's swirling around in the air during a boil is water vapor, so there shouldn't be any problem with her sensitivities to gluten... am I correct in this assumption? Should she stay away from my kitchen if I'm brewing?

Celiac or gluten intolerance is a problem in the digestive tract. So unless she eats or drinks something that contains gluten it won't be a problem. Just don't let her taste the wort :)

Yup. You're good unless you were milling the malts yourself in your kitchen and you made a huge mess... and all the grain dust was in the air....
