CBS vs KBS

I’ve been considering brewing a Founders KBS clone for a few weeks now. I’ve never tried it, but the descriptions and reviews sound great. However, I’ve recently been able to find some CBS on draft and it was much sweeter than I would have liked. This has me reconsidering the decision to brew KBS. So - those that have tried both - is KBS less sweet than CBS? Should I try mashing KBS at a lower temperature than listed?

Did you ever brew your KBS clone?

I have tried and love both of these beers. KBS is significantly less sweet than CBS due to no maple syrup but both beers have that beautiful bourbon barrel aged sweetness that I love!

Agree. This year's KBS seems even less sweet than normal to me. Granted, I've only had it on tap twice in from a bottle once.

I have 3 bottles of CBS from this year and haven't cracked any of them open yet. One is supposed to be shared with my HB club, but I forgot to bring it to the meeting last month.

Anyway, I think CBS *may* be a touch sweeter, but they are similar overall. I think that's usually what you get from a really big beer. I recommend trying any big, barrel-aged stout and see what you think. It's an expensive batch if you don't end up liking it. Then again, I bet you will find plenty of people who will take them off your hands!

CBS and KBS are the same base beer. The difference is what they are aged in.

I actually just brewed it up last weekend, a good few months later. It was next on my "to brew" list anyway, but I was able to get ahold of some KBS recently and really enjoyed it. It wasn't a dry beer, to be sure, but I liked it much better than the maple variety. I'm looking forward to trying the clone in a few months' time.
