Long story short, there is a craft beer her locally I love. I was curious what gave it its very unique flavor. Discovered it was cardamom. I did a little research about adding it to a home brew. Found some advice that recommended 1 oz to the boil. When I opened the cardamom package I got it almost blew me over with the intense smell. I thought one full oz would be overkill, so I actually scaled it down to 1/5 oz. It was actually a very small amount, or so I thought.

Anyway, the beer had been in a bottle for a wk and I decided to give it a try last night. WOW... very intense cardamom. Now, its not horrible, not bad I guess... but good lord it is a very strong flavor.

Guess my question is if this flavor will mellow out over a few more weeks?

Just wait it out and see what happens. If it's still too much, you can always pour a glass of 1/2 cardamom beer and 1/2 something else to make it a little more palatable.

And make a note that you want to use 1/10 oz. next time!

Its blown my mind that such a small amount has made so much flavor.

It is a "brown ale"... I also added a vanilla bean, 1 oz of hopps, and cinnamon stick (of coursed sanitized in bourbon) to the secondary. I was essentially trying to copy this local beer. I knew it wouldn't be exact but, all I can taste is cardmom haha.

I will wait it out a few wks and see what happens. As it is right now its one of those beers that you can basically have one of.

It mellows, it just may take a bit. I have a wheat wine that I spiced too heavy, after 5 or so months it is now awesome

Here is another example of my I love this site. Had never thought of using Cardamom in brewing my beers. Canuck137 here is an article I found on using Cardamom in brewing. Hope this helps http://www.brewingspices.com/Brewing_with_cardamom.htm :) Will be adding to my next Belgian Wit.

Cheers:mug:

I would give it a go but use a small amount haha. I think it depends on the type of cardamom or if it is powdered or not? I may have been looking at 1 ounce of powdered cardamom. If I had used a whole ounce it would have been insane.

I have used it a few times. I put between 2-5 cracked cardamom pods per 5 gallons. I get a nice flavor at this level. It is some good stuff in moderation.

Using this scale would mean I should have used 3-6 in my fermentation pail. I cant really remember how much I used but it was probably close to three times that if I had to guess. More like 15-20 cracked pods. It didnt seem like a lot at the time lol
