Hello brewers I have a burly stout recipe that I'm preparing to put into action. I'm hoping for a gravity around 1.090 or higher. Reading a couple recipes I have noticed some people spit their wort into 2 carboys to alleviate for a vigorous fermentation. I happened to have stumbled onto a giant 10 (I'm thinking close to 12) gallon glass carboy. If I rack my wort at around 5 to 6 gallon into the big Bertha will that work the same as splitting it? Or will that be too much headspace?

Thats a mammoth piece of glassware. Sounds like a demijohn. Yes it will work and will provide plenty of space for your fermentation. I would think you will be fine as the head space will get flushed out with the vigorous fermentation. I've read a few places that a 5 gallon batch produces about 100gal of Co2 during fermentation(plenty to flush out your fermenter)

You could always run a blow off tube from your 6 gallon fermenter to a bucket of starsan and not have to much of a mess. Or if you have the ability to but you can always flush the head space out with CO2 if you have the equipment.

It is a beautiful piece of work. Best part of it is that we stumbled on it at a friends house that we brew at and he "donated" it to our brewery. We have a stopper and hose ready to blow out. Can't wait to get this ball rolling.

don't screw with it and remove the airlock too many times to take samples and you should be fine. if you give it a good long primary, the oxy will be displaced by 02
 
Yea she's a big one. That's a 5 gallon batch and its not even halfway. We just found her by an extreme coincidence the day before we started brewing. We built the blow off tube for when we do 10 gallon batches (or bigger) I don't think we can fit just an airlock on the rubber stopper we made. The stout ended up being 1.118 so its going to be maxing and relaxing for some time.
