I force carbed my beer and it is at the corbonation level I like. I'm serving this beer in 3 days and I don't want to over carbonate it. Should I take the gas off until i drink the beer or leave the psi at serving pressure for the next 3 days?
 
Change the pressure to serving psi- like 8-12. Then purge the high psi in the keg down to the line pressure and leave it alone.

Or just unplug it and plug it in the day you serve it. Although it could change the way you perceive the co2, so do what I said first :D
