When using fresh yeast to carbonate a high abv beer, how long does it generally take to carbonate? I have had a 9.7% golden strong that has been sitting in champagne bottles for about 3 weeks now and was wondering if it might be done carbonating. I conditioned it with a packet of Safale S-33 yeast for insurance and am carbing to about 4.0 volumes.
 
Bottle carbonation can be a bit of crap shoot, but 10% ABV isn't that high - I wager most brewer strains could manage.
Back when I was bottling 3 weeks was a good number for everything I brewed, including an 11% stout, across a variety of strains.

Next brew, include a 12 ounce screw-top plastic drink bottle in the mix. When that plastic bottle gets almost too hard to squish at all, your beer is carbed. It dramatically cuts down on the "Oops, it ain't ready yet" openings...

I typically bottle about 3-4 8oz Coke bottles as carbonation samples.

1) They are clear so you can see any visual problems.
2) you are only opening an 8oz bottle instead of a 12oz-er

But a plastic bottle is a good idea too. I probably would not use a plastic Coke bottle though since it is a very rigid plastic. You might want to try a seltzer water bottle or a 12oz Sams water bottle. They have smooth edges that are easy to press on.

This works really well, especially when you're filling the bigger 750s!
