We are consistently at 68 degrees, shut the door on the room and put a towel under the door, and the temp went up to 78ish. Is it OK to have temp fluctuations and how much of a temp range is OK?
 
I'd say anything around 70* initially would be fine. The yeast can only consume the sugars that are available. So if you hit your FG and properly primed the bottles they should be fine. However, if its a big beer I would age it in the 50's... at least that is ideal.
