I recently built a keezer. Picture is attached. I installed a STC 1000 temp control to replace the original freezer temperature control. I am able to adjust it to any temperature. I am also able to remove the CO2 tank fairly easy with the disconnect installed. I live in the PNW and the temperature is fairly cool during the year but the summer is inconsistent. Will I ruin the keezer if I set the temperature to 65-70 degrees to ferment a beer? Anyone have any experience with this?
