Can I Use Copper Piping?

I am rebuilding my home brewery and want to know if there is a problem with using copper for all the piping going between a three tank system.
I use milled out 1" triclamp ferrules and solder 3/4" copper pipe inside. I use these a lot and they work great. I have three 55 gal pots so everything is being built with clean in place.
 
I would not use extensive copper on a brew rig as it is a known catalyst wrt oxidative stress and copper ions are known to have a negative influence on beer flavor stability. I would also be concerned with (toxic) verdigris hiding inside the uninspectable tubing...
