I just made a yeast starter but for some reason I'll be unable to brew the day I planned. So my question is, can I dump the starter in a jar and store it in my fridge? And if the answer is yes, how long will it hold there?

Probably best to just leave it where it in the starter vessel. No need to transfer it and risk presenting any sort of organisms to the yeast. It should last about a week with out any viability issues in the fridge.

It depends on how long it will be stored. If it's in a flask without a good way to seal, then the longest I would keep it is 2 weeks in the fridge. I would be worried about infection at this point. Longer than that, I would transfer all if it to a sanitized mason jar and leave it in the fridge until I need it.
