Can I detach the CO2

You can but you'll only get a few pours out of it until it reaches equilibium and then you'll need to charge again. Set at 12 psi and leave it on. My $0.02.

Thanks, I will do that. You're right I only got about 5-6 pours (over a week time) from it before I noticed today a kind of stale taste. I'm hoping that it just flat beer and I didn't ruin it.

Weird thing is I was still getting CO2 bubbles rising and creating a 1/2 inch head. The head went away after a couple of minutes and it seemed that all of the bubbles stopped rising too.

Yep, flat, no pressure to keep the CO2 in. Carb up, set at 12 psi, pour till empty! Cheers!
