I made a dumb mistake tonight, When I siphoned the primary into secondary I realized my carboy was to big I think about 7gal. But I started a 5 gal batch to much head space in a 7gal carboy. I'm still kicking myself:smack: but I need to try to fix this I'm making welches grape from frozen concentrate how can I add to this?

Stop freakin. Your wine is full of CO2 right now so you have time to get a 5 gal carboy, you need more carboys anyway. Just keep the airlock on your carboy. You can also of course add more Welches. CAREFULLY and SLOWLY, or your next post will be I added more juice and the carboy erupted purple stuff all over my house:) You can even wait until it drops a lot of the yeast before you move it to your new 5 gal carboy. We sometimes rack a 5 gal batch into a 6 gal better bottle just to let it drop out a bunch of yeast so that when we rack over to the 5 gal carboy we know its going to be full and not have to worry about topping off on that racking. Ok, Thanks I guess I should of thought of that. This will give me an excuse to go back to the brew store this weekend. Funny how a new day will shed light on something.

Yeah just make sure your 5 gallon carboy is cleaned and sanitized again and siphon away. I also keep 3 gallon carboys and one gallon jugs on hand for minimizing headspace in secondaries. Don't worry, stay happy! Oh by the way I like your name buzzer!
