Hello Good Brewers,
I've just crushed an @$$load of apples and have 10 gals of juice that I just treated with campden tabs. How long should I wait to pitch my yeast. Does temperature matter when using these tablets? Any help would be greatly appreciated. Thanx in advance.

Campden works no matter the temperature, but can be difficult to dissolve in cool liquid. Commercial yeast can be added anytime, since they tend to be so vigorous that sulfites alone have negligible effect on the fermentation. Pitching sooner rather than later is safer since it gives spoilage microbes less of a chance to take hold in the juice. Within 24 hrs is typical.
