So I've been wondering lately if I were to add Camden tablets to a batch of mead would it effect how well it ages?
 
So what about potassium sorbate? Should I add that right before bottling?
 
Potassium sorbate's primary purpose is to prevent fermentation from restarting; if you aren't planning to backsweeten a mead that hasn't hit its alcohol tolerance yet, I wouldn't bother.
