Hi All
I've been brewing just short of a year now and haven't poured a batch down the drain yet. Recently brewed a California Steam Lager w/ White Labs liquid yeast and all went well. Let sit in secondary for 6+ weeks or so as my schedule got tight. Tried a bottle 2 weeks in and flat as can be; a bit cloudy, and lots of 'banana'. 2 weeks later, still flat, clearer but banana. mixed up some more yeast and added 2-3 drops per bottle, recapped. Now we are carbed, relatively clear but still too much banana for my liking. fermented in a swamp cooler so I don't think heat was the issue. all previous batches crystal clear. If I really chill it, less banana.

Any thoughts? Does Steam Lager taste banana?

I've never made one, but they are supposed to ferment warm, right? My understanding was the definition of a steam beer was lager yeast at ale temps? Maybe 'definition' isn't the right word.

Yes, you are correct. I used the cooler just to keep the temp fluctuations down. I'm sure I fermented at room temp after the water came up to 'room temp'
