I think the problem is my heat exchanger after much racking my brain.
I took the RTDs out of the kettles and turned everything on and let it sit for a while and the 3 MYPINs ended up being within 1 degree of each other. So it's not the probes or the PIDs.
My copper coil doesn't rest on the element but it's pretty darn close. I think that when the wort or the strike water is passing through, and the element is at 100%, it heats up that section of the coil at a much more rapid rate so when the wort/water gets to my probe at the re-entry point of the mash tun, it's 5-10 degress warmer than the probe in the HLT.
Other than that I can't think of anything else that would cause it.
