I've got a Cal Common chugging away on day 9. I made a big starter of Wyeast 2112 with activity within the 1st 12hrs. Ferm the first 7 days at 60 degree's and I'm slowing ramping up the temp to 68. Visual activity and airlock activity is still moving pretty well. I'll do a gravity reading in a couple of days. I'm having a party and want this on tap by day 21. Is that pushing this style too soon? I was hoping that I'd hit final gravity by day 14 and then keg and carb for a week before serving. I know it will be young and will improve with age but has anyone had luck with such a short turn time? I've drank all my IPA' only have cider on tap now. I'm sure as h..l not giving my guests my KBS stash.
 
Thats pushing it. It will probably be slightly rough, but it will likely be drinkable. 3 weeks in the cold conditioner would be more ideal, but what can you do?
