Hi everyone,

I've got a high ABV Honey Ale still bubblin' away in the primary 2 week after the boil. One blub every 10 seconds and the cake hasn't fallen yet. I usually like to rack to the secondary at or before 2 weeks before the bottom sediment starts making some off flavors of their own.

What do you think: Rack now, or be patient and wait for the cake to fall?

Can you take a gravity? That'll tell you exactly where its at. Otherwise I'd let it go until the cake drops, but I don't use secondary fermentation so our process is different.

High ABV beers will take longer. Give it more time. You won't have to worry about off flavors from the trub for another five weeks. Maybe not even then with the improvements made to yeast quality in the last decade.
