Bypass Thermostat on Fridge?

Hey guys. I've been using this Vissani Wine Fridge and a stc-1000 for fermenting, but the thermostat on the fridge doesn't allow me to cold crash. Based on the pics below, can anyone tell me what I would need to do to bypass the thermostat?

Would be nice to see a view from the right, but if I'm seeing it correctly, you have one female spade terminal with a yellow and a brown wire, and another terminal with a red wire.

That thermostat is a simple switch, so if you remove both terminals from the thermostat and wire them to both sides of the cold relay on a temperature controller, it'll own that fridge...

Thanks day_trippr! I appreciate the response. I did some more searching and found a DIY thread here:

I wired it up from the back of the fridge. Connected both the wires that run through the thermostat and viola! Worked perfectly!
