I just finished a couple hrs of work - bottling my Vanilla Cream Ale (tastes great) and racking my Black Currant Belgian Wit to tertiary & off the fruit. It had been on the fruit for over 2 weeks, which I know is bad, but I couldn't taste any astringency and lemme just say

Holy F***ing S(** this beer is Amazing. If anyone has any interest, here's the recipe:

6.6 lbs Wheat DME
1/2 lb crystal malt 10L
1/2 lb wheat malt
1/2 lb torrefied wheat malt
1 lb maltodextrin
1 oz east kent goldings (bittering)
zest of 2 oranges
WL Belgian Wit ale yeast
1 Big ol' bag of frozen blackcurrants added to secondary (pasteurized @ 140 for 30 min)

I also added a bit of gypsum @ the beginning of the boil

anyway, I re-racked that, drawing off a pint along the way, and it was awesome. I had to work around my friends playing beerpong on the same table I was using to get the siphon going, and one of my friends got Trashed and started acting retarded. I almost had to kick him out, but you all know how that goes.

So now, after a whole lot of work (mostly cleaning... lol I used a funnel to get all of the blackcurrants out of the wit and then proceeded to knock it all over my floor..) I've come to realize how great it is to have a wide selection of homebrews at your disposal. Big kudos to Andre the Giant for the inspiration.

Damn, that does sound good!

Yet another recipe to add to the ever growing list. :eek:

I'm also interested in looking at your Vanilla Cream Ale recipe....have you posted that somewhere?
