Well then! After all the times I have run by this forum, I never noticed this! I guess I should contribute my buffalo chicken sausage recipe!

4-5 lbs chicken thighs with skins
1 cup hot sauce (Frank's preferred)
Water to top off for marinating
1/4 cup hot sauce
5 egg whites
1 cup bread crumbs
2 teaspoons garlic powder
1/4 cup crumbled bleu cheese (optional)

Cut the chicken into strips for grinding, in a large bowl, mix 1 cup hot sauce with 1 cup water, add the chicken. Top off with water and mix to distribute the hot sauce evenly. Marinate in the refrigerator for 4-6 hours.

Drain and grind the chicken. Mix the 1/4 cup hot sauce with the egg whites, mix into meat with bread crumbs, garlic powder, and bleu cheese. Stuff as you would any sausage or make patties.

I usually parboil them for a few minutes before pan frying them to crisp up the casings. Goes great with ranch or bleu cheese dressing!
