Hey all. Ran into an interesting situation today and wanted to get some advice. I forgot to activate my Wyeast packet prior to starting my Wort, which isn't too big of a deal I suppose, but when I realized this about half way through the boil, I apparently smacked the packet too hard and it burst. Now that Ive already used all of my grains, LME, and hops, how long can this wort sit (in a sanitized primary fermentation bucket) without yeast until I can get to the store to get another yeast packet? Unfortunately, my local home brew store is closed tomorrow, so the quickest I could get a new packet of yeast, activate it, and pitch it would be around 48 hours from now. Should I just give up on this batch or will it be ok to pitch the yeast 48 hours after the wort is finished?
 
I hope your sanitation is perfect, because you really don't have much of a choice unless you have dry yeast handy.
 
Get it cold if you can. That will help.

Also, did you determine how much yeast you need for the beer? [generalization] Beers that are 1050 and above require a starter or multiple smack packs/vials. If yours does, consider more than one smack pack in order to reduce fermentation lag times. Mr. Malty starter calulator: http://www.mrmalty.com/calc/calc.html will help you determine if a starter is required or the number of packs needed to sproperly ferment your beer.
