Alrighty, so i'm working on a recipe for my next beer. It's going to be a hazelnut, chestnut brown ale.
I've never brewed with hazelnuts or chestnuts before. I was thinking of adding them on the last boil right at the beginning and keeping them in there almost a whole hour.
Any thoughts/recommendations?
Thanks so much <3

Basically you want to soak the chips for a long time at 150F, then add amylase and pectinase at least 30 minutes left in the pre-boil mash.

In my case, I soaked them in a crock pot over night.

I am inexperienced with filberts as a beer ingredient.

I used chestnuts once in a brown ale for the holidays and was not happy with what it did to the beer. They add a lot of sweetness, so I would make sure you have plenty of time to let the yeast ferment it all out so you don't end up like a sweet, starchy mess like I did. I wouldn't use them again, personally, but it's not my favorite flavor in the world.
