So I am one of 8 homebrewers that get to brew a batch at New Holland Brewery on October 16th. It's part of a homebrewing promotion thing I signed up for on facebook. I have to bring my own equipment in, but they are flipping the bill on the 2-row and the hops. I am limited to the hops they have/use. They are also giving my choice of yeast: ale, lager, or kolsch. I figure if somebody else is paying I might as well do a hop monster. I was thinking of doing something Pliny based, but the hops don't seem to match up well. Here is a list of the hops they can provide.... any suggestions on recipe types? Also - I mash in a 10 gallon cooler, so my batch size is limited depending on the OG.

You can sub extra centennial for the columbus, they are somewhat close. I would just toss cascade in there instead of the simcoe and see what happens. It'll probably be really good.

For a pliny, that is.
 
I would also do a huge, hoppy beer. Go for something that has a sg around 1.1 and an IBU around 90! Go big if it's going to be free!
 
Ok... Here is what I came up with.... subbed Cascade for Simcoe and Nugget for Columbus based on a few of the Pliny recipes I've seen out there. According to Promash I'm at 9.89 gallon in the mash at 1.29 qts/lb in my 10 gallon cooler. It's going to be interesting... Thoughts?

Also - I've never used hop sacks but think I might need to in this case.... Should I get 3 of them, one for each addition? At flame out should I pull them out and put it the zero minute hops with no sack? My system is set up where I can whirlpool using my pump... Should I do a whirlpool for any certain amount of time with the zero min hops before starting to cool?
 
Dude, just throw ALL of those varieties in! Make something a la Port Brewing's Hop 15... make a mix of all the varities and just continuously add to the boil, similar to Dogfish Head's method for the 60/90/120 IPAs.

Ninkasi's Maiden the Shade uses 7 different varieties of hops, no reason why you shouldn't use 10 varieties for free!
