So BREW DAY today, and I have a question..

The recipe calls for a late LME with 15 minutes left in the boil. So my question is, should I take off the heat when it calls for the addition, stir in the liquid malt and then resume the boil.

Is it okay to kind of stop of the boil and the resume it because of scorching purposes?

Any insight is helpful...
 
Yes. You don't want to burn the DME. Anytime I add sugars, i turn off the heat and dissolve it first while stirring.

Also don't burn yourself by pouring your DME from your roof.
 
That is how I did the last extract brew. The question I have though, is do you count the time that the wort was not boiling as part of the 60 min boil or do you start the time again when it starts to boil?
 
Went very well. So I had recently bought 2 3-gallon glass fermenters and found that they fit nicely in a 5-gallon bucket. Sooooo, in order to maintain a cooler fermentation temp, I add water and a little bit of ice and put a towel around the neck of the carboy.

I'm maintaining a temp of just under 65F.. I bet if I add more ice and a fan that I can maintain under 60F, maybe even lager conditions if I stack iced water bottles around the top of the water line.

Any thoughts?
