My first extract brew was a BrewersBest Weizenbier. It turned out a little darker than I expected.. I assume from caramelization. After doing a few more extract brews after the first one, I noticed that this kit had be add my second can of LME at the 40 minute mark in the boil. Would that be to try and cut down on caramelization? Other kits I've done had me dump most of my extract early on.

Another thing that wasn't quite right for me was the taste of the beer, it definitely tasted like beer, and decent beer, but didn't taste like what I expected. Now my expectation could have been off as well, but I would be heading towards something along the lines of a typical hefe. After talking with my LHB shop, I picked up some liquid yeast (White labs WLP300).

I'm planning on doing the kit same as I did before timing wise, but making sure I stir like crazy to help prevent caramelization, and instead of using their yeast packet, using this liquid. How's that approach sound? Or can anyone recommend anything else I might try to get where I want to be?

The late extract addition will help with your hop utilization. The less dense wort will help isomerize more alpha acids from the hops. The extract doesn't need to boil for the full time, just long enough to sanitize.

I would turn off the heat while adding the extract and make sure it is mixed well, before turning it back on.
